These recipes are excellent! I made the Brown Butter Pecan ice cream, and it is the best ice cream I've ever made.
The recipes are involved, there are quite a few steps and ingredients (9 egg yolks!), but well worth the effort.
The ice cream freezes wonderfully, and is relatively easy to scoop once it is completely frozen.
I did replace the sugar with erythritol, and it worked great.

Great book for Ice cream recipes! Lots of creative flavors, also many recipes for sorbets and vegan ice cream.
